Guyra Hotel licensee Ian Cook, 63, pleaded guilty to all three charges in Armidale Local Court on Monday.
The charges are licensee not remove minor from bar area, which took place on July 29 and licensee sell liquor not according to authority and in bar area before or after authorised times - hotelier liable on July 30.
Defence solicitor Emalie Hercum submitted a letter of contrition written by Cook to the court, along with references and case law.
Magistrate Michael Holmes said he did not wish to deal with the matter on Monday because there is significant detail to consider.
“There’s a substantial amount of reading and I want to have a look at the law,” he said.

Police prosecutor Cheryl Hall told the court the licensing officer is seeking extra conditions.
The Cook matter is adjourned and will be appearing in Armidale Local Court again on May 1.
